Quick and Easy Creamy Chicken Spread Recipe
February 08, 2015
When Kuya was diagnosed with Tubular Adenoma, his pediatrician told us that he should avoid eating red meat and resort to white meat aside from eating more cooked vegetables and fruits to have a healthier gastrointestinal tract. What happened to him was an eye opener for us. We realized that we should change the family's diet and lifestyle. To start with, I was inspired to make a quick and easy creamy chicken spread.
It's a subtle version of my old chicken spread recipe with lots of red onions and pepper. This new version is perfect for kids who are not fond of eating spicy or peppery food. Even Papa and Nona like this so much. This can also be a perfect base for Macaroni Salad. Just add pineapples, raisins, and boiled macaroni, it's all set!

It can only take you less than 15 minutes to do this, granted that you already have boiled chicken breast. If not, it takes 30 to 40 minutes. By the way, I included the brands that I used but you can use any brand that you wish.
Ingredients
690 ml Lady's Choice Mayonnaise (220ml + 470 ml pouches)

1 medium red onion, minced
2 tablespoons white sugar
1 tablespoon pickle relish
1 big boiled chicken breast, shredded
Procedure
Mix all ingredients in a bowl. Transfer in a clean, dry container and place inside the refrigerator. Best eaten with white bread and crackers.
