Ginataang Sitaw at Kalabasa Recipe

We have three picky eaters here at home, my two boys and Mom. Sad to say, fruit and vegetable dishes are not popular to them. Preparing meals is indeed very challenging. Resorting to something unhealthy happens but Papa and I make sure that it doesn't happen all the time. Both of us like to eat fruits and vegetables more than meat but our kids don't. Isn't it ironic?
They used to like fruits and veggies when they were very young. How come that now they don't? There are things in this world that are very unpredictable. But it doesn't stop there. As parents, we should find ways for our kids and also Mom to like fruits and vegetables because they have more health benefits compared to other food items.
This fruit recipe that I'm going to share to you becomes so irresistible that even our picky eaters love eating it. Take note, Kalabasa/Squash and Sitaw/String Beans are FRUITS NOT VEGETABLES because they have seeds.
Here is our quick and easy Ginataang Sitaw at Kalabasa:
Ingredients
250 grams pork sliced into small cubes
1/2 medium Kalabasa/Squash, seeds removed and cut into cubes
(We don't peel Kalabasa because the skin is a good source of fiber and nutrients too.)1 small bundle Sitaw/String Beans, cut into approximately 2 inches long
1 40 gram sachet Del Monte Quick and Easy Gata Mix, dissolved in 3/4 cup water
2-3 cloves garlic, minced
1 medium onion, chopped
1/2 Knorr pork broth cube
1-2 pieces Siling Haba/Green Finger Chili
1 tablespoon fish sauce (optional)
2 1/2 cups of water, for boiling pork and fruits
Procedure
1. In a saucepan, boil meat in 2 cups of water.
2. When water diminishes and oil goes out of the pork, fry it until golden brown. Remove from the pan and set aside.
3. On hot pork oil, saute onions followed by garlic and add fried pork when the onion and garlic sweat already.
4. Put the squash and string beans. Put 1/2 cup of water, pork broth cubes, and Finger Chili/s then simmer.
5. Pour in dissolved gata mix when fruits are half cooked and simmer in low heat until they are cooked. Stir occasionally. You may add fish sauce depending on your preference.
6. Remove from heat. Serve with hot steamed rice. Enjoy!
