STRAWBERRIES AND CREAM CUPCAKES

Cupcakes

1 1/4 cups Maya All-Purpose Flour

1/2 teaspoon baking soda

1/4 cup butter

1/4 cup sugar

1 egg

1/4 cup milk

1/2 cup strawberry jam

1 1/2 tablespoons lemon juice

Strawberry Whipped Cream

1/3 cup strawberry jam

1 cup whipping cream

strawberry jam, as needed for filling

Procedure

Prepare cupcakes. preheat oven to 350F/177C. Line a 12-hole muffin pan with cupcake liners. Set aside.

In a bowl, combine flour and baking soda. Set aside. In another bowl, cream butter and sugar until fluffy. Add egg and beat well. Add the dry ingredients and milk. Blend well. Stir in strawberry jam and lemon juice and mix until well combines. Pour batter into the prepared pan, up to 2/3 full. Bake for 20 minutes or until done. Allow cooling.

Prepare whipped cream. Stir strawberry jam to soften. In a mixer bowl, beat whipping cream until stiff. Fold in strawberry jam.

To assemble, make a small hole at the center of the cupcakes and will with strawberry jam. Pipe strawberry whipped cream on top.

Yield: 10 cupcakes

I already miss baking with my boys. Baking with them is so much fun and has a lot of benefits.

- It teaches kids Math skills like measurement, addition, subtraction, multiplication, division, estimation, and time from start to finish. 

- Kids learn Science concepts like Chemical Reaction, Mixtures, Solute, Solvent, and Senses.

- Kids can create fun memories with their parents that can be added to their memory.

That's why Kuya and I enjoyed The Maya Kitchen's Mommy and Kid Baking Workshop. On the following day of the said workshop, we taught Bunso and Kuya what we learned. We enjoyed the activity very much! 

Here's one of the two recipes that we've learned:

PEANUT BUTTER & CHOCO CHIP CUPCAKES

Cupcakes:

1 1/2 cups Maya Cake Flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup butter

2/3 cup peanut butter

1/2 cup white sugar

1/2 cup brown sugar, packed

2 eggs

1/2 cup milk

1/2 cup semi-sweet chocolate chips

Chocolate Buttercream:

1/2 cup butter

2 cups powdered sugar

1/2 cup cocoa powder

1/4 cup milk

3 tablespoons whipping cream

PREPARE CUPCAKES. Preheat oven to 350 F/177 C. Line two 3-oz. 12-hole muffin pan with cupcake liners. Set aside. In a bowl, combine flour, baking powder and salt. Set aside. In another bowl, cream butter, peanut butter, white sugar, and brown sugar until fluffy. Add eggs and beat well. Alternately add dry ingredients and milk, ending with the dry mixture and beating well after each addition. Pour batter into prepared pans until 3/4 full. Bake for 25 minutes or until done. Cool completely before frosting.

PREPARE CHOCOLATE BUTTERCREAM. Using a mixer, beat the butter until light and fluffy. Gradually add sugar and cocoa powder at low speed. Add milk and beat at medium speed. Lastly, add the whipping cream and beat until light and fluffy. Pipe or spread on top of cool cupcakes.

YIELD: 14-15 cupcakes

You may eat the cupcakes without frosting and still tastes good. :)

The event, held in the Grand Ballroom of the picturesque oceanfront integrated resort, was well-attended by media partners and other guests despite the heavy rain. 

Vivo Philippines Vice President for Sales Ms. Hazel Bascon during her opening remarks highlighted the global smartphone brand’s dedication to innovation. 

“What is about to unfold before you is the reveal of the world’s first smartphone to feature an In-Display Fingerprint Scanner housed in a beautifully-designed all-glass build, a smartphone that is truly exceptional in more ways than one,” she said. 

Vivo Philippines representatives Mr. Patrick Villareal and Ms. Jomarie Morales then went up on stage to explain each of the specs of the Vivo X21. The pair discussed how the In-Display Fingerprint Scanning Technology as well as the other features such as the AI Face Access, front and rear cameras with an all-pixel dual-core sensor on the X21 work. 

Sharing Tech Expertise 

During the launch, Vivo also invited on stage some of the respected industry experts to discuss the X21. They are Mr. Louie Diangson of Yugatech, Mr. Daniel Moral of GadgetMatch, Mr. Mark Milan Macanas of TechPinas, Mr. Giancarlo Viterbo of GadgetPilipinas, Mr. Peter Jan Icogo of Gizguide, Mr. Jamie Inocian of Unbox, and Ms. Alora Uy Guerrero of Revu. 

Mr. Diangson discussed the In-Display Fingerprint Scanning Technology and the AI Face Access of X21. Mr. Morial then explained how efficient the X21’s AI photography. 

On the other hand, Mr. Macanas talked about Vivo X21’s front camera, specifically its AI Face Beauty. 

Mr. Viterbo, moreover, shared how Vivo X21’s AI Game Mode keep interruptions at bay while playing PUBG Mobile and other games.

Shopee Philippines is an online shopping mall. Through the new partnership, Vivo has put up its official online store on Shopee Philippines. 

Akulaku, meanwhile, is an online installing shopping mall that also provides financial services in Southeast Asian countries. Vivo smartphones can now be bought online installment payment options on Akulaku. 

Exhilarating FIFA Fever 

Vivo, as the Official Smartphone Sponsor, of the FIFA World Cup Russia 2018 brought the football fever to the launch of X21. To get a glimpse of all the excitement in Russia, Vivo displayed some FIFA merchandise at the lobby. 

During the presentation of the X21, Vivo mascots also showed the crowd how to do the #PassTheSwag FIFA dance. Vivo Philippines endorsers Vern and Verniece Enciso, Chie Filomeno, Maris Racal, and TJ Monterde then strutted the new flagship with a Vivo FIFA ball on their other hand while they proudly sport their favorite FIFA World Cup Russia 2018 team jersey.

I am the kind of person who is very particular with details. Maybe it has become a course of habit due to being exposed to situations and responsibilities that entail details. Being the eldest child in the family with one sibling to take care of, a former teacher of preschoolers, and now being a full-time mom exposes me to situations that need to keep people dear to me safe. Hence, I've listed down the basics in preventing home accidents that I always practice .

- Avoid using electrical appliances near a bathtub, pail, or basin full of water.

- Never use an electrical appliance while barefoot, standing on a wet floor, while taking a shower or bathing in a tub.

- Never plug an electrical appliance with wet hands or while being barefoot.

- Turn-off the light switch when replacing a light bulb. Using a thick dry cloth or gloves can also keep you protected from being electrocuted. 

- Place a non-skid mat in the bathroom to refrain yourself from slipping.

- Always clean as you go. Wipe water, powder, grease, or oil on the floor to avoid slipping.

- Don't put containers of hot liquids like soup, coffee, tea, on top of the table covered with a table runner with the edge running down. Someone might accidentally pull the cloth and can scald himself or anyone near the area.

- Make sure that the handles of the pots are not protruding out while cooking to keep them away from children's reach. By doing this, you keep yourself from bumping into it accidentally.

- Keep all sharp objects like knives, pairs of scissors, blades, needles, tools, cutters out of children's reach. The best way to keep them is inside a cabinet with key and lock.

- Janitorial needs and chemicals must be kept in a place where they can't be reached by children. The best way to store them is on a top portion of the storage area and must be secured and locked at all times.

- Using a fan is not recommended when mixing chemicals especially when you do it inside a room with less ventilation. More chances of poisoning may happen if you do.

- Mix chemicals using disposable cups, plates, or spoons and never reuse food and beverage containers to avoid accidental ingestion.

- In case you forget a pan with oil on the stove, never put water to stop the fire. Oxygen in the air causes the fire to rise. Cover the pan to make the fire stop then turn off the heat.

- If very curious young kids are present at home and have the tendency to plug appliances, make sure to use electrical plug covers. 

- Protect yourself and your loved ones especially the young ones from bumping into table and furniture edges by placing edge guards.

- Place a double lock on top of the door, difficult for small kids to reach to refrain them from opening the door without your help.

- In purchasing an electric fan, check if small fingers can fit into its guard, otherwise, don't purchase it.

- Cosmetics are attractive to kids die to their colors and they should be placed in areas where they can't be reached easily.

I haven't experienced having a facial treatment in my 40 years of existence. Friends would tell me to join them in their pampering sessions but I always decline. There was one time that a dermatologist friend of mine offered a Diamond Peel treatment but I said that I wasn't ready. Ang pakiyeme ko, 'di ba?

I feel that there is a need for me to visit her but I choose to delay it. I have the tendency to feel uneasy by just thinking that my face would undergo any procedure or treatment. I need to do something with my clogged pores and white heads especially on the nose area because they are really, really disturbing and don't look good at all. When I was very young, I began to be conscious of my body image at age 10. I heard my friends talking about menstruation, baby bra, pubic hair (Yes, they were talking about it.), spray net, body mists, and deodorants. I was so hesitant to ask my mom about that stuff. All I remember was she taught me to use Avon's Feeling Fresh Deodorant after taking a bath or shower because I was complaining that "Tawas", the antiperspirant/deodorant recommended by my grandmother, made my armpits sweaty and sticky. It's so easy to use. In the evening, after washing and drying your face, apply a generous amount of iWhite Korea Recovery Sleeping Gel Mask all over, avoiding the mouth and eye area. Wear the gel mask throughout the night and wash it off in the morning with water. 

This product is for everyday use. I don't experience any irritations at all. It's so light, non-greasy, cool to the skin, and smells really, really good. I suggest that you purchase this for trying and testing before you buy the large tube that costs ₱229.50. If it's good on you, don't think twice when purchasing the large tube because it goes a long way.

You may also like trying the other two variants of iWhite Korea Sleeping Gel Mask: Whitening and Vitamin. I've already tried iWhite Korea Vitamin Sleeping Gel Mask. It works also for me but I like iWhite Korea Recovery Sleeping Gel Mask more maybe because it fits my skin and age, I guess. I am not a huge fan of whitening products that's why I haven't tried the "whitening" variant yet although I am planning to do it in the future.
